The Project

Angie Hernández's Los Nogales farm in the mountains of Pitalito,Colombia, is a hub for innovation and research in coffee cultivation. With a focus on sustainability, the farm has become known for producing exotic varietals, such as Geisha, through cutting-edge processes. This year, the team has implemented a new approach to soil management and fermentation, inspired by international coffee farms.

They aim to revolutionize both the biological and technological aspects of coffee production, with an emphasis on balancing terroir, genetics, and science to create exceptional coffees.

 

The Coffee

Los Nogales' Geisha Petal is a prime example of the farm's dedication
to quality. This coffee is made from hand-selected, ripe Yellow Colombia cherries, which undergo a thermal shock to boost glucose and remove microorganisms. The cherries are then pulped, and a specially crafted pre-ferment (similar to a sourdough starter) is added to a sealed fermentation tank for 120 hours. After fermentation, the coffee is solar-dried for 15 days to develop its complex flavors.

The result is a cup with an intricate profile, offering floral and fruity notes with a smooth, refined texture, showcasing the farm's innovative techniques and commitment to quality.
