The Project

Los Pirineos farm in Usulután, El Salvador, is led by fifth-generation producer Diego Baraona, who honors over 130 years of family tradition while innovating in coffee cultivation and processing. Located at 1,400 meters on a volcanic slope, the farm benefits from a unique microclimate of sunny days and cool breezes, ideal for producing exceptional coffees. Sustainability is central to the farm, with rainwater harvesting, shade-grown practices, and year-round employment for 60 workers.

The Elite Bourbon, from 90–100-year-old trees, is a tribute to Diego’s father, Gilberto.

 

The Coffee

Elite Bourbon Black Honey showcases a rich heritage and careful processing. Slow drying under shade highlights notes of caramel, ripe fruit, and balanced acidity.

Cultivated in volcanic soils, this coffee reflects the unique terroir of the Tecapa Chinameca mountains, a region celebrated for its premium coffee.
