The Project

Wilder Lazo’s family in San Adolfo (Huila) is dedicated to producing specialty coffee. After a devastating fire, they rebuilt their farm through hard work and determination. The entire family is involved in coffee production, from gardening to processing and commercialization.

Wilder is a well of knowledge when it comes to genetics and processes, he focuses on enhancing the uniqu characteristics of each coffee varietal through specialized fermentation and post-harvest methods.

This knowledge comes from Wilder’s past career in bovine genetics, where he dedicated many years travelling across America to study and improve cattle breeds.

Recently, he joined the El Placer Farms Project to connect more closely with roasters and coffee drinkers.

 

The Coffee

1. When cherries arrive at the farm’s facilities, they are selected through flotation and placed inside GrainPro bags to ferment for 60 Hours.

2. The cherries are pulped and placed inside plastic tanks where the coffee ferments anaerobically for 100 hours.

3. The coffee is lightly washed leaving some mucilage on the parchment.

4. Laid under direct sunlight for around 15 days, being collected and stored every night to avoid the night’s humidity reaching the coffee.

5. Coffee is stored for stabilization before threshing and exporting.
