The Project.

Finca Eliza is part of ChocoVilcaMundo (CVM), an Ecuadorian agricultural company owned by Bernard Uhe and his Colombian coffee growing family. The farm, located in Loja, Ecuador, was purchased in 2016 by Martin and his daughters. Inspired by specialty coffee during visits to Boquete, Panama, Martin and Bernard began cultivating specialty coffee using high quality seeds.

Managed by CVM’s experienced Colombian family and local Ecuadorians, the farm produces award winning Arabica coffee at high altitudes in the Andes. In the 2023 Cup of Excellence, Finca Eliza placed 10th with a Washed Anaerobic Gesha, while Finca La Noria from the CVM family achieved 1st place.

The Process.

Wet Process:

1. Harvest red ripe berries.

2. Wash red ripe berries and remove berries that float to the surface of the washing tank.

3. Ferment berries in bags for 48 hours, turning bags every 12 hours.

4. Depulp berries and ferment depulped beans for 48 hours in bags, turning bags every 12 hours.

5. Wash the parchment thoroughly in washing tanks.

Dry Process:

1. Place washed beans on raised drying beds raking, turning beans every 8 hours for minimum 10 days or until humidity is between 9.5% and 11%.

2. Place 45 kilos of dried parchment coffee into grain pro bags into a climatized storage area maintaining 16 Celsius to 18 Celsius and 48% to 52% humidity.
