 The Project

Finca Las Margaritas is one of the coffee farms of Café Granja La Esperanza.

The farm is notable for its diverse varieties, including Geisha, Pacamara, Bourbon, and Sudan Rume, allowing for unique and complex flavor profiles. The project combines tradition and technology: each lot is carefully processed using natural, honey, washed, or anaerobic methods, depending on the variety and desired profile.

Hand picked cherries, controlled fermentation, and meticulous drying ensure high quality coffees with floral, fruity, and sweet notes characteristic of the region.

Finca Las Margaritas reflects Café Granja La Esperanza’s philosophy of innovation and excellence, focusing on sustainability, traceability, and the production of internationally recognized specialty coffee microlots.

The Coffee

This lot starts with a deep focus on quality cherries are sorted by ripeness and density to ensure only the best move forward.

After a precision Brix reading, the journey continues with a first stage open tank fermentation lasting 18 hours, unlocking delicate floral and citrus layers.

Once pulped, the coffee undergoes a second, oxygen rich fermentation for 24 hours. A thorough wash follows, preserving clarity and elevating the cup’s complexity.

The beans are gently dried in mechanical silos at controlled temperatures around 38°C, allowing flavors to concentrate slowly over 3 to 5 days.

Once dried, they're stored under stable, cool conditions (18–19°C) to maintain their character and ensure consistency all the way to the final roast.
