The Project

La Esperanza farm, managed by Jairo López and his family in Quindío, Colombia, focuses on producing specialty coffee with an emphasis on sustainability and innovation.

The farm cultivates Geisha varietal coffee at 1,670 meters above sea level. Jairo has developed a unique carbonic maceration (CM) processing method to enhance the coffee’s floral and fruity notes. This involves fermenting cherries in sealed tanks to control temperature and pH, followed by drying on raised African beds in a greenhouse to preserve complexity and sweetness.

 

The Coffee

This Geisha coffee from La Esperanza farm showcases Jairo López’s dedication to quality and innovation. Only perfectly ripe cherries are selected for anaerobic fermentation in sealed tanks, allowing the beans to develop vibrant acidity and delicate sweetness. After 20-25 days on raised beds, the beans reach their optimal moisture content, resulting

in a cup with intense floral and fruity notes, balanced sweetness, and a smooth finish.

This process captures the unique terroir of Quindío and the expertise of the López family.
