The Project
Los Pirineos farm, led by Diego Baraona, is a fifth-generation coee operation in Usulután, El Salvador,
with over 130 years of family tradition. Situated at 1,400 meters on volcanic slopes, the farm leverages
its unique microclimate—sunny days and constant breezes—to produce premium coees. Diego upholds
environmental sustainability by using rainwater, providing shade-grown coee habitats, and maintaining year-round employment for 60 workers.

Los Pirineos pioneered Pacamara cultivation and continues to innovate with its processes. This Pacamara Natural showcases the farm’s expertise, with cherries carefully sorted and fermented in GrainPro bags before slow drying over 40 days on raised beds.

The Coffee

Pacamara Natural highlights the distinct terroir of the Tecapa Chinameca mountains, featuring
volcanic soils and a perfect balance of sun and wind.
The process enhances the coee’s sweetness, body, and fruity complexity, reflecting its unique
microclimate and heritage.
